The One & Only

Kneel before it, and pray to you're gods so you might have a chance to meet it, for this is...the one...the only... FRANCESINHA!
It's one of the most popular northern Portuguese delights, and people fight to have the best recipe. Overall it's nothing more than a complex sandwich, with melted cheese on top and if you desire a sun side up egg. French fries, and of course the thing that makes it a Francesinha, the sauce. And it's that sauce that is so delicious and makes you come back, it's the tenderness of the meat, and all the goodness put together, that makes the ultimate sandwich/meal. This particular francesinha is from Ze.Come, in Vila Real, but the most popular in the country are the ones from Porto. I don't like them, personally. But that's a personal choice of taste. Try them and then decide. You might find that you don't like it at first, but when you find a special one, you won't want to leave.

The Childish Way to Eat

 I know this is childish, but it was really fun to make, and fun to eat, as well. Although, maybe I was distracted and put a bit much cayenne pepper on it, and fire came out of my mouth. It's a really nice thing to try, when you have the time.

Tinny Apple Pies and Palmieres

   Because some time ago I bought two store bought pastry dough, I thought the best way to use them before they went out of date was to make tinny apple pies, and palmiers. Never thought they would turn out to be sooooooooo goooooooood ~~

Instant Pancake Mix Pay's Off

   After making the pot of nigella's pancake instant mix I started to make pancakes more often. And at night, when hunger tends to strike, I make so pancakes and eat them in bed while watching various tv series.

Pineapple Tiramisu

   In the summer my mother always likes to make a dessert with lady finger cookies, pineapple and double cream. But this year I tried to make a different spin on it. Like a tiramisu but with pineapple and mint flavouring. It was nice :)

   Another recipe from one of the books that was offered to me this year. Seriously enjoying these books, they make me feel like a pretty good cook.

  Really easy recipe, really nice flavour and the colour is simply amazing. Pure joy.

  These are the reasons I'm so passionate about food, it's something we cannot live without, so why not make it beautiful? The art behind food, the mix of visual and sensory stimuli, is the main reason why I never want to stop cooking.

Mighty Duck Rice!

   The week before making this, I was in Lisbon, and wanted to do this with friends from college, but got with a small cold and didn't feel up to the job.
  But as soon as I got to m hometown, I did it! This is one of the classic Portuguese dishes, and although it is very time consuming, it's very tender, crispy, flavoursome, and true comfort food. One of my favourites. It was amazing as always.
